From Farm to Table: Carrot Cake

Sunday means EATING! Yes, its the day of the week when the whole family just watch TV and eat. But before the EAT thing, there must be a COOK thing. And today, I am baking Carrot Cake.
I got my main ingredient straight from our farm. It is one of the vegetables patch that was left after a CAFGU Camp moved out of our property. Me, Lil Bro and Mama tried to salvage it from drowning with weeds.




 For my carrot cake;
3/4 cup granulated sugar
1/4 cup brown sugar
1 cup All purpose flour
1/2 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
3 large eggs
1/2 cup oil
1 tsp. cinnamon
1/2 cup raisins
1/2 cup walnut
1 1/4 cup grated carrots
I am making a small batch for this recipe, double everything when baking for a regular rectangular pan. When baking, just mix all the dry ingredients together and do the same with the wet ones.
Grated Carrots

Eggs, sugar & oil

Dry Ingredients
Then add dry ingredients and grated carrots alternately to the wet mixture. Then add raisins and walnuts. Baked it in a 360 degree oven for 20 minutes, or until a toothpick comes out clean.
